I need to send my application today.

On my cv do I italicise the tasks in my previous jobs which they are asking for in the job description?

In my cover letter do I need to write something out why I want to work there, or is it obvious from my applying there?
There is no ethos or company purpose or anything on their website, it's a small local company beyond a belief in innovation and technology we foster research and development to meet customer requirements day-to-day.

No italics for me, I use bullet points but it doesn't really matter so long as it's clear and legible.

YY to why you want to work there on the cover letter, doesn't have to be about company values and you can focus more on why the jpb is a good fit rather than the company itself but at least a throwaway line about the company to show you at least know who you are applying to and what they do (you wouldn't believe the number of applications that say things like 'I always wanted to work for the NHS' when it's a job at the council or 'it's my lifelong dream to work in marketing' when it's an accountancy job or similar, don't be that person!

Don’t use italics but do tailor your CV to the specific job/ company. Your covering letter should also be specific and state why you are applying, what you bring to the job and why you want to work there.

OK well don't say that, that's a selling point of the job to you not of you to the job which is the point of a cover letter! Just focus on your skills and previous experience and how you meet the person specification/advert requirements, with a couple of lines about the company....
