What shall I do with my one and only aubergine?!

It needs cooking, like, now! But I don’t have a whole load of other stuff in so I’m contemplating just roasting it in olive oil. Unless anyone has any fab suggestions!

Ooh I too have a lone aubergine.

Going to fry it up in thin slices then stick it on a nice chunky piece of sourdough, pop some goats cheese on top then drizzle with olive oil, a few fennel seeds and grill it.

Melanzane Parmigiana. Slice lengthways, dip in egg and breadcrumbs, fry, then nestle in a baking dish surrounded with a rich tomato sauce, smother in cheese and bake.

I too have a line aubergine (not a fan!) & was planning to do caponata tonight, but have realised we don't have the meat in we usually do with it so might have to rethink.

Cut into quarters and roast in the oven with seven spice mix and oil, and honey for the last few mins. Dip into garlic yogurt and eat.

Cut into slices. Make a batter with gram flour, water, salt and garam masala. Dip in the batter and shallow fry.

Well I’ve gone for the easy (or probably the only) option since my ingredients were very limited! Am roasting it with cherry tomatoes and pine nuts, and will eat it with a glop of sour cream.

I like the sound of a lot of these suggestions though so thank you:)

Aubergine and lentil moussaka but you do need other bits in for this. It’s delicious
