I have 4 butternut squashes on my kitchen windowsill.....

And the neighbors are probably wondering if I'm collecting them 🤣

Combination of weekly veg box plus some friends have grown and I need to use the blasted things up to make space for Christmas snacks clearly!

Looking for meal ideas, we are trying to do meat free mondays. Don't necessarily have to be family meals can always do the children something seperate.

So far I've got.....
Butternut squash and lentil soup I make this alot
Butternut squash risotto
I want to try butternut squash macaroni where you blend a whole squash for the sauce

Another ideas please wise MNers

Squish it down in a pan with softened onions, a little bit of stock and sage to make a thick, lumpy ish sauce (so not much stock) and stir in with tagliatelle abs Parmesan.

Lovely in a curry, adds sweetness

Slice up and layer with other veg in a dish ratatouille style, or even with cream like a dauphinoise

Roast butternut squash cut into fingers with cumin and optional chilli seeds. Serve on a bed of rocket (or other salad that's less peppery if the children would otherwise eat it), shaved parmesan, toasted pine nuts and balsamic vinegar. Option on adding prosciutto which does definitely improve it but obviously isn't meat free...

Use as a roast veg with main meals. … if you roast it you don’t have to peel it first, the skin goes papery.

Someone brought a butternut squash cake/bread to work and it was lovely- a bit like banana bread!

I hate cooking butternut squash. But I did do a nice recipe with squash, feta (could substitute goats cheese), caramelised red onions, cashews and spinach. It was nice and apart from roasting the squash, easy to make.

Cube, roast and cover in a spicy tomato sauce. Serve with pasta 😋

I just love cubed and roasted butternut squash. I give it a little blast in the microwave first, peel it (some don't), chop it, coat in oil and spices, roast and then scoff.

I also roast extra for leftovers as it goes lovely in a salad or in a sandwich in a yogurty dressing.

I currently have two lurking! Am thinking about trying a pumpkin pie with one. Roast squash is a lovely thing though.

This gnocchi dish, just use squash instead of sage. You can add spoonfuls of ricotta or the mini mozzarella balls (bocconini?) if vegan is a step too far. blog.lakeland.co.uk/recipe/crispy-gnocchi-with-mushrooms-squash-sage/

Squash chilli - roast squash, peppers, onion and cumin plus chilli's to taste, add two tins of tomatoes and two tins of beans, heat through in the oven.

Pam try some diced butternut squash with some prosciutto, chilli flakes and pine nuts (quite a bit of butter and olive oil). Add to tagliatelle with Parmesan and stir through rocket.

Cut it into cubes, drizzle of olive oil, sesame oil, sliced garlic, chopped red chilli, drizzle of honey salt and pepper pop into the oven for 25 mins if it's just getting brown then add some chopped halloumi and pop back into the oven for about 10 mins till the halloumi is brown. While that's cooking, cook some couscous and then mix together!

Mary Berry does a fabulous bnut squash and mushroom lasagna. It is a thing of joy.
I roast it with chilli flakes and have it as a side dish with a roast. Or on top of a salad with goats cheese.
