What to do with stir fry veg that isn't a stir fry

Have bought too many. Everyone sick of stir fry .....

Is it the ready chopped kinds with the beansprouts in?
Surely it doesn't last that long in the fridge.

But maybe something like laksa, thai soup etc?

Soup, add grated potato and make rosti. Sometimes I just microwave it like any other veg and it eat as is.

I think they're normally deep fried, but I just brush with oil and bake.
