What can I make for dinner with chicken, bacon and mushrooms?

Occurs to me I might be able to make something interesting with it, hoping someone has a great recipe!

I have 2 chicken breasts, a Punnet of chestnut mushrooms and a Pack of bacon

Plus store cupboard stuff!

On second sweep I also have a sheet of puff pastry.

Spinach in the freezer (plus peas and broccoli), fresh asparagus but ideally that’s earmarked for tomorrow. Garlic/milk/cheese etc. In the fridge.

I'm guessing you're after more than a pasta sauce with some cream and cheese. I know it's the obvious choice but it's what I would make

I’d make a bechamel sauce with some chicken stock and make a pie with the puff pastry

It’s all screaming pie to me. Puff pastry on the top, broccoli and peas in the side.

If you have cream or egg, I’d do a carbonara with the bacon and mushrooms (and maybe some peas if you aren’t a carbonara Puritan) and chuck the chicken back in the fridge. Smile

Autumn and the changing clocks does make me want to eat my body weight on pasta and comforting food.

I would use low fat cream cheese and add a little milk to make a sauce with the cooked bacon mushrooms etc and serve over pasta

No cream sadly 😩 but I’m liking the concept of pie. Could also be sold on a good pasta sauce recipe.

I would do it in a dish with pastry on the top. Nothing fancy just a white sauce then fry off the bacon, chicken and mushrooms and mix together. Puff pastry on the top.

I'd do a rissotto

Sliced onion in the base of a baking dish. Chicken on top, cover with bacon. Bake for 40minutes or so until the bacon starts Browning. Cook sliced mushrooms with garlic in butter for 1 minute then add plenty of cream. Cook gently for a few minutes it should thicken. Add plenty of pepper. Pour this over the chicken and bake for another 40minutes or so the sauce shoukd be thick and bubbling.

Add cheese for the final 10minuts. Serve with rice and veggies.

Definitely a pie. Make a filling with the chicken, bacon, and mushroom, add stock, some flour, cream and wholegrain mustard, some thyme if you have it. Lob the puff pastry on top or roll the pastry out and create a big pastie.

I often do my own variation of this its fab and dead easy, quick delicious and warming. I usually use ordinary potatoes instead of sweet potato and I usually use dried herbs.

Fry everything off in a pan add flour then some stock and reduce it
Put the pasty on a baking sheet on a baking tray and cook it separately in the oven
Pile the chicken mixture on individual plates, cut the pastry into squares and balance it on top
Much easier and neater
