What meal can I make with a cheese roux?

DS is off school awaiting a PCR result. He's missing food tech so I've said he can do it here, he has to make a cheese roux (sorry I think I'm spelling that wrong). What meal could I make?

Macaroni cheese
Cauliflower cheese
Lasagne (instead of white sauce)
Any pasta bake

If you want simple, macaroni cheese. Or a bit more complicated, a lasagna?
Or if not pasta, how about cauliflower cheese?

Sure there are many more exciting options too.

To add to the above ideas, we made a very tasty smoked mackerel gratin the other day with potatoes and broccoli.

Or you could make nachos with a proper cheese sauce.

Fry a variety of veg, Eg:
onion, courgette, brocolli, green beans, mushrooms add a tin of butter beans then the sauce.

I do tuna pasta bake like that. Cheese sauce, cooked pasta and tinned tuna. Easy!

He can make it extra thick and do rarebit.
Or he can separate some eggs , add the yolks to the sauce and whisk the whites and fold it all together for a cheese soufflé.
(If he’s really good at FT…)

Ready made puff pastry. Either tuna & sweetcorn or veg mix in the cheese sauce ( mini sweetcorn, broccoli etc). I put half the pastry on a baking sheet, add filling, moisten edges with milk or water then put other half of pastry on top.
I fold the top half of pastry lengthways & make cuts approx 1cm apart to make a kind of lattice top before putting on top. (Obvs unfold it before sticking it on top!). Easy & yummy
