Easy nourishing, non demanding vegetarian dinner

We are all filled with cold in this house- LFTs inidcate it is not covid, (I hope) but we are pretty miserable anyway.

Does anyone have any easy peasy veg meals to suggest? I can only right now think of Shakshuka as I have the ingredients in. Maybe brocooli and stilton soup for lunch.

Grateful for ideas . :)

Recently I've been roasting veg ,adding a tin of chickpeas and a tin of tomato ,smoked paprika , topping with feta and baked in oven .

But might be too much faff if you're all suffering .

I do like the sound of that @peridito thanks. DH would adore that dish.

I am hoping i have some energy later. I can MN and type (thank goodness!) but yesterday Intried vacuuming downstairs and it wiped me out. Dinner last night was leftover takeaway for the Dcs and a croissant for me.

I make nasi goreng quite often, I stir fry mixed frozen vegetables with sambal olek paste and then add cooked rice (I use the microwave pouches) and kejap manis to taste. Top with a fried egg and some sriracha if you like.

Roast veg, cous cous and halloumi or feta.

Beans on toast

Mushroom fried rice with some quorn thrown in if you like it.

This is actually very quick and easy. Don't be put off by the fact that it says prep time 40 minutes - the majority of that time you are just sitting on the sofa while the oven does its thing.

You let the buckwheat cook gently while you chop and roast the peppers (a few mins setup then have a sit down and a cuppa). Then when the buckwheat and peppers are cooked you saute some red onion and bung in the beans, peppers, buckwheat and seasoning. Stir it all around and transfer to a pyrex dish with cheese on top and either pop it back in the oven or under the grill for the cheese to melt. It's really very little faff and truly delicious.

Two tins of borlotti beans in a big cast iron pot. Add a tin of chopped green olives (or don't bother chopping them). Two cans of artichokes (drained) into the middle then surround with tomatoey stuff (either two tins of chopped with lots of salt, garlic and thyme or the equivalent of hand chopped fresh or a mixture of fresh and canned). Slug over olive oil. Chuck in oven for 40mins. Serve with bread. It's a Nigel Slater ripoff but it's fast, vegan and tastes incredible.

TBH Baked pots and beans with an egg sound about perfect. But I am definitely making notes of dishes because although DH has been veg for years I am newly (re) converted and he can exist on salads forever and I simply cannot. So the ideas are extremely welcome. :)

I do a veg stirfry wt ready chopped veg and Amoy noodles. lots of garlic, ginger, soy sauce, sriracha and crushed peanuts on top. Very easy. You could also use the Blue Dragon stirfry sauces except they do have a lot of sugar in them.

Super easy cheat ratatouille...

Bag of supermarket frozen Mediterranean veg, roast in the oven for 20 mins, then transfer to a pan and add a tin of chopped tomatoes. Season etc to taste. We have with jacket pots.

Do you have any sachets of microwaveable rice? We often make fridge raid fried rice with it, nice and easy and feels like a proper meal.

Carrot cake - something quite comforting about carrot cake. I don’t do the cream cheese icing but either leave plain or make a water ice with icing sugar and squeeze of lemon juice.

Don’t forget you can bake your potatoes and keep extras in the fridge for another day, I regularly keep half for up to a week or even freeze

One of my kids favourites in very quick and simple, cook penne pasta, add either tinned tomatoes or Passata chopped mozzarella and cook till the mozzarella turns stringy, serve and sprinkle with hard cheese

Can chickpeas, can tomatoes, can coconut milk, curry powder to taste. Simmer on hob till it looks a nice consistency. Serve with rice or couscous or a spud.

And then there is always canned macaroni cheese with fake frankfurters and some frozen sweetcorn… my dd went to uni and was surprised to find this wasn’t something everyone ate Grin
