Easy nourishing, non demanding vegetarian dinner

We are all filled with cold in this house- LFTs inidcate it is not covid, (I hope) but we are pretty miserable anyway.

Does anyone have any easy peasy veg meals to suggest? I can only right now think of Shakshuka as I have the ingredients in. Maybe brocooli and stilton soup for lunch.

Grateful for ideas . :)

My "can't be bothered to cook properly" dinner is a bag of stir fry veg, block of tofu, thai curry paste and coconut milk to make a curry and microwave rice or rice noodles.

@SinoohXaenaHide do you have the quantities for that HelloFresh recipe? It just says things like “one pot” but I’d like to try it!

I am not good at cooking but I can make vegetarian sausages toad in the hole! You just bung that in the oven and 30 minutes later it's done! I usually put those steamed bags of vegetables with it.

Vegetables, pasta and cheese on top. Baked beans on toast. Sweet potatoes and roasted vegetables (on a tray bought at the grocery store).

Can chickpeas, can tomatoes, can coconut milk, curry powder to taste. Simmer on hob till it looks a nice consistency. Serve with rice or couscous or a spud.

And then there is always canned macaroni cheese with fake frankfurters and some frozen sweetcorn… my dd went to uni and was surprised to find this wasn’t something everyone ate Grin

Heinz tomato soup grated cheese and crusty bread. Must be Heinz. Only thing that works when I feel crap.

I do this. Packet rice, sometimes various roast veg. Sometimes not.

Easiest heartwarming veggie dish is: packet of gnocchi, spread out in a baking dish. Pour a carton of passata over them. Stir in a heaped teaspoon of garlic granules, a spoonful of mild chilli seeds, a big scoop of pitted black olives and half a bunch of chopped basil. Top with slices of mozzarella. Cook in the oven for 30 mins, until mozzarella is bubbling and golden brown. Scatter the second half of the basil leaves on top and serve.10 mins to prep, max. If you want you can add sliced peppers too - either straight from the freezer of slice your own fresh ones. You can also jazz it up with some sun dried tomatoes, artichoke hearts, capers etc if you like.

If you download the pdf linked on that page it gives most of the quantities on p2 (after just listing them vaguely without quantities on p1).

Possibly unclear - For the Stock it means those little tubs you get from oxo or knorr that are a bit posher than a stock cube - I tend to use the whole thing as I don't want a teaspoon of unused stock hanging around in the fridge till next time I am cooking.

For the creme fraiche the quantity isn't important, as you are just putting a dollop on top of whichever amount you fancy. I think the standard supermarket small tub size is 200ml

For the black beans it just means a standard tin size, same size as a tin of tomatoes.

I usually use more peppers than the recipe calls for - I allow 1.5-2 peppers per serving rather than 1.

This takes a little effort (although not much - I can go from fridge to table in 25 mins), but is quick, easy and makes a vat so can freeze for a quick meal another time. It’s also really versatile, as it ‘should’ be a hidden veg sauce for homemade pizza or lasagne, but I use it as a pasta sauce so don’t blitz it smooth.

I also have a veg chopper/grater which blitzes veg small, so takes the sting out of chopping.

Anyway:

Oil in pan with 1-2 tsp chopped garlic
Add Butternut squash (about half, or most of a packet of slices) chopped/grated small.
Add chopped/grated carrot (2-3 large)
Add chopped/grated courgette (1 largeish)
Add chopped red/orange/yellow pepper (1-2)
Jar of passata

Add tin of chopped tomatoes if you need to bulk it out further.

This makes enough to feed 4 of us twice, with 1 or 2 single portions extra for dd’s lunch.

As mentioned above, if you blitz it smooth once cooked, then it can be used as a hidden veg tomato sauce, but I tend to have it as a quick pasta sauce standby with lots of grated cheese on top.

Veg burgers- tofu, breadcrumbs, teaspoon of marmite, an egg. Jamie Oliver recipe, SO good, so much better than the sum of its parts! I did it with smoked tofu last night and it was even better!

I'm having sweet potato, cauli and pea curry. It was made from a jar of curry paste, (Waitrose I think?) and some coconut milk. Been in the freezer for a while hence the uncertainty.

A huge pan of homemade minestrone soup is our go to if everyone is too ill to cook. It's better after a day or so too & if you throw in plenty of mixed pulses & seeds, it's very nutritious

Any kind of beans: cannelini, kidney, borlotti, chick peas. Onion/shallot plus garlic. Fry off with smoked paprika, add beans and tin toms, a few herbs, a dash of Tabasco/other hot sauce and some chili flakes (or add before serving if some of your gang dont like the spice). Serve with warm rolls/baguette ( I keep part baked loaves in for this type of meal) and sour cream or grated cheese. I do some chorizo in a separate small pan for the meaties in my family

I make this chickpea curry all the time! So easy and so delicious. I often add some chopped onion at the start (sauté in some oil) and maybe some veg (e.g.chopped courgette).

There are some really lovely bake in the oven veggie curries in the Quick Roasting Tin book that are easily adaptable and tasty. And once the veg is chopped you can sit down for half an hour while it does its job. Also love rice or couscous or orzo recipes too. It does have meat recipes but obvs you can ignore them

Star wars stew - tinned beans, tomatoes, sweetcorn plus chopped veggie sausages. Top with thinly sliced potato and cheese, bake in oven for an hour or so. Delicious and super easy comfort food! No idea why it's called that though, I confess.

Lentil and lemon soup is also quick and easy - red lentils, tinned toms, thyme, tomato puree, onion cooked in stock. Squeeze over lemon juice before serving. Much more delicious than it sounds! This was originally from one of the Covent garden books and it's been a faithful standby for years.
