Easy nourishing, non demanding vegetarian dinner

We are all filled with cold in this house- LFTs inidcate it is not covid, (I hope) but we are pretty miserable anyway.

Does anyone have any easy peasy veg meals to suggest? I can only right now think of Shakshuka as I have the ingredients in. Maybe brocooli and stilton soup for lunch.

Grateful for ideas . :)

Thanks so much everyone.

In the end I went with baked potatos with cheese and baked beans. Everyone even ate it which is rare. Just sorting that has worn me out so i am heading for bed while DH sorts out the DCs.

But I have saved all these ideas because there are some absolute gems and loads of inspiration. I really really appreciate people taking the time to respond. :)

Gnocchi with a tomato mascarpone and butternut squash sauce. If you buy the frozen butternut squash and microwave it before frying off. Add garlic and lots of tomato’s blitz before adding mascarpone.

Fajitas are another speedy dinner in our house.

When I really can’t be bothered we have pasta pesto and peas.

Do you have access to a good Far Eastern supermarket? If so:
Good quality red curry paste (there is usually a veggie / non prawn version)
Coconut milk
Smoked tofu
Whatever veg you have in the fridge
Rice
...easy peasy

Spinach pesto: olive oil, fresh basil, parmesan, pine nuts in a food processor with as much spinach as you can fit in on top - whizz whizz - add to pasta!

If so inclined, saute some frozen peas, courgette and chopped tomato in a pan until soft and mix in the pesto

I’m currently thinking of training to be a Hypnotherapist now I’m getting older and would like to know if it earns good money at the beginning or eventually and are you constantly looking for clients or are they falling at your feet, otherwise is it a good career/income or a struggle?

My teen DC despise beans on toast, but if I swap the normal bread for
crisped up naan bread, suddenly it's the best thing ever. They also love naan bread pizza, which is handy for using up peppers, tomatoes, mushrooms etc. that are a bit past their best Wink Easy, quick, & minimal shopping. Toasted naan bread, passata, cheese, toppings.

This is such a nice thread. I hope you're starting to feel better now!

My current favourite is a tin (or two) of butter beans, a tin of chopped tomato, a generous spoon of ginger paste, a good spoon of smoked paprika, and some cumin. Leave to bubble away for about 15-20 minutes then add some chopped peppers, cook for another five, and you're done. It's very nice with a spoon of yoghurt over the top.

I also loved spicy rice when I'm feeling a bit delicate - just mix your cooked rice with tumeric, bit of curry powder, cumin, cinnamon (or whatever you like), add a good knob of butter, and serve it with quarters of soft-boiled egg. Very nutritious and the egg is a great source of easily-digested protein if your stomach is a bit delicate.
