Chicken marinade recipes?

Bananasandevap · 29/10/2021 18:59

I have a selection of cheaper cuts (drumsticks, thighs, wings) of chicken on the bone that I want to cook for tea tomorrow.
Going to serve with corn on the cob, a home made coleslaw and some crispy fries but I don’t know what to marinade the chicken in tonight!
Any ideas?
It’s for 1 adult (me, who will eat any marinade) 1 15 yo who likes spice and 1 12 yo who doesn’t, don’t mind making 2 marinades.

I like a Mediterranean marinade - olive oil, oregano, garlic and lemon juice. And seasoning of course.

I made something last week that was nice - just greek yoghurt, garlic, salt and harissa. It wasn't too spicy but really nice.

How about honey and mustard (just runny honey, whole grain and Dijon mustard and olive oil.)
Or balsamic vinegar, crushed garlic, oregano and olive oil
Or tandoori paste, natural yoghurt, nigella seeds and mango chutney

You could add chilli flakes for more kick.

Honey, ketchup, sweet chilli, soy sauce, Chinese five spice and a teaspoon of vinegar.

Mix it all together.

Get like a deep rich sweet and sour/Chinese type flavour.

Add peanut butter for a more satay type taste, or bbq sauce instead of ketchup for a bbq flavour.

Also good on ribs and belly pork

Smoked paprika, sea salt, oregano and a little garlic Smile

I don't marinade ahead of time.
I squeeze garlic puree on the meat, add marjoram & dried parsley and half a mug of water to tray, shove in oven for 20mins on 200°C.
when it beeps I turn chickens over, back in for 20 mins, done.

I always make extra as kids love it for sandwiches for school
