Enchiladas here.

I'm meal planning later and need some inspiration Grin

Chicken and veg stir fry with either noodles or rice and peas. Also made some egg stir-fried rice with onions, peppers, mushrooms and Chinese five spice for me and DH. Pudding was an apple and blackberry crumble with custard. Kids burn off a lot of energy, been playing laser quest game in the woods today!

Chowder - bbc good food recipe - and nice bread from the baker for dunking in it.

Ragwort · 26/10/2021 19:31

Something I used to have as a student forty years ago for a cheap meal, I just fancied it tonight ... spaghetti, olive oil & chilli flakes - I did add Parmesan cheese and sun dried tomatoes - and a large glass of Merlot!

DH also in 'student mode' and doing a fry up.

Some evenings I just can't be bothered to compromise on something we both want to eat so it's nice to do our own thing.

Drumshambo · 26/10/2021 19:31

Dh cooking smoked haddock and leek risotto at the moment. Crusty bread and wine to go with it.

sunshinelover69 · 26/10/2021 19:35

@CookieDoughKid

A 9 hour slow cooked morrocan lamb stew with aubergine. Thick, soft and hearty.
Do you have a recipe for that? Sounds good.

We had pasta amatriciana. Sauce home made.

dementedma · 26/10/2021 19:38

Chicken casserole in slow cooker. Remains will make soup

Quornflakegirl · 26/10/2021 19:41

Soup with beef, vegetables and vermicelli.

A slice or orange semolina cake with orange syrup.

fivelittlethings · 26/10/2021 19:42

Beans on toast, we are all full of the cold, and was the only thing we could all agree on without lots of dishes!

Bouledeneige · 26/10/2021 19:45

Carbonara tonight.

toastedsandwiches · 26/10/2021 19:48

@Tulipomania - sounds lovely!

AdaColeman · 26/10/2021 19:53

Smoked salmon & watercress sandwiches. Then a pudding of madeleines, mixed berries, a splosh of crème cassis and lashings of cream. It looked those jars of chopped up cakes that are everywhere just now, but it tasted alright!

Palavah · 26/10/2021 19:54

Wholewheat spaghetti with kale, parmesan and walnuts.

Andthenshetripped · 26/10/2021 19:57

Baharat halloumi with green beans, Batata harra and sumac yoghurt

CookieDoughKid · 26/10/2021 20:05

sunshinelover69 yes I do. I followed this online recipe and it came out brilliantly. The only thing different is I put all the ingredients in together , I didn't cook an hour before adding in the aubergine. I browned aubergine lightly and added it all in with the lamb at the start. I used a slow cooker. Took me 15 to 20mins prep in the morning and left it stewing. Oh and i added thick slices of raw carrot and chopped potatoes. No pre cooking I just bunged it all in the pot! Put on low temp slow cooker mode and just checked every now again there was enough water so it didn't burn but there was plenty. No need for top up.

Bugbeau · 26/10/2021 20:06

We had home made Nando’s which was:
Chicken in Nando’s bbq spice rub in wraps with salad, perinaise & chilli jam. With wedges and halloumi on the side.

popmenow33 · 26/10/2021 20:09

We had low carb moussaka, it was delicious

neonorchid · 26/10/2021 20:10

Hairy Bikers Sausage Casserole. Absolute winner in this house.

HeyMicky · 26/10/2021 20:12

DD made (homemade) hash brown and bacon stacks, with a poached egg, and green beans and broccoli on the side

Kernowfornia · 26/10/2021 20:13

Fridge-roulette.

MintyCedric · 26/10/2021 20:15

Left over roast pork thinly sliced and heated through with tomatoes, sweetcorn, nandos BBQ seasoning and cream cheese to make a sauce, served with brown rice.

Chicken and vegetable pasta in a tomato sauce. Not very exciting, but quick to do on a weekday evening!

savagebaggagemaster · 26/10/2021 20:23

We had lunch out with our friends so decided to have a light dinner.
Dd had mashed avocado on sour dough toast. Ds had German smoked cheese on toast. Dh and I had beans on sourdough toast.
The cat had some Felix "as good as it looks" and some Dreamies on the side. Grin
