Trying to lower screen time in an 11 yr old

All of our screen time needs an intervention, but I am stuck on what the 11 yr old could be doing instead. He’s always been happy outdoors and is being investigated for ADHD.

I am trying to come up with ideas for what he can do when he’s at home. We take them out on bike rides etc, but at home if I was to take his screens away he’d just torment his siblings. He will read a bit at bedtime, but doesn’t love it.
His time online isn’t awful, he’s watching ‘how do they make that’ videos and trying to teach himself python, as well as gaming etc.

I just feel stuck as to what he should be doing. It seems like a bit of an in between age.

If he goes to school nicely. Comes away when asked and enjoys all the outdoor things you do, I am not sure that letting him
use screens as his down time is a problem?

How about something like cooking/baking? With or without supervision?

Or jigsaw puzzles? Lego? Board games?
