Cranks cookery books. But I think they are out of print so you would need to hunt down second-hand copies. The original one uses hardly any special ingredients, just things most people would have in their cupboards anyway.

The Bosh books are great
I have been using Mob veggie this week.and have planned meals for next week from it.
I absolutely love the two Nigel Slater Greenfeast books.
The vegetarian Middle East cook book ( I think it's called)
is really well used in our house.
Vegan on the Go is good for teens!

Mob veggie is good too.

Vegetarian meals from Gousto (recipe boxes) are really nice too.
