So you don't actually need to peel butternut squash?

You can just de-seed it, chop it into skin-on chunks and roast it like that?

This is entirely new information for me. I'd been doing the whole whacking it into the microwave for a few mins and then peeling it thing.

My lazy inner chef rejoices at this news.

Yes but the skin is hard and nasty and you then still need to leave the bits of skin on your plate…

The skin goes soft and delicious and is perfect for eating!

As another tip, you don’t actually need to deseed it either - do it when it’s cooked and then roast the seeds for a bit longer with some paprika and salt and pepper, delightful

Same for pumpkins etc - none of it needs to be peeled

The skin is delicious when it’s cooked down (as long as it’s been given a generous glug of oil).

Yes you can use it in curry with the skin on.

Jamie Oliver put unpeeled chunks in a curry last night. That was what first alerted me. And then Nigella had a skin on recipe on her website today. They must have had an AGM and decided to let me know.

I usually cut it top and bottom, cut long ways, deseed, slice it and cut the thick skin off.

This is good to know. I don't have sensitive skin but when I peel them I get a red rash on my hands.
