My onions are too crunchy

Have a bolognese simmering (been on for 90 mins) and I've just had a taste. The onions finely diced and sautéed as per usual are really crunchy?

I simmer for another hour at least but things are usually soft by now? Have I messed up the easiest thing in the world? Will my onions soften??

I think you need to fry them for longer until they are soft and browning before putting them with the other ingredients

I cook mine for at least fifteen minutes with salt added on a lowest possible heat covered stirring occasionally not too much oil
They are supposed to be translucent I think?

You will need to cook the sauce for longer until they’re softer I guess

Not helpful for you right now but I always gently fry my onions first so they soften, then add and fry off the meat, and then the liquid to simmer.
I guess they’ll eventually soften up? Just leave it to simmer, then if you leave it sitting for a while that might help too.

You need to cook them longer, higher temp before simmering or slow cook for alot longer.

I sauté the very finely sliced onions on a very low heat for at least 20mins before anything else goes in the pan.

I've been cooking for 25 years + and know how to prep the onions I swear

I did exactly what I normally do and the onion just didn't soften as usual. I have added some extra liquid and cooked for longer - I normally aim for 3 hours.

Dunno 🤷‍♀️ this happens to me sometimes.
Maybe just super crunchy onions if you’re definitely softening them until they’re translucent before adding the liquid and other stuff.

On the basis that we've had some very hard aubergines that refuse to soften when cooked, it might be a climate/cultivation thing?

Maybe blitzing the sauce in the microwave for a couple of minutes might help (cover it!).

I add a pinch of salt to onions to help soften them during frying.

Add some cheese and breadcrumbs on top of whatever you are cooking and nobody will notice (possibly)!
