What do you eat when you’re not cooking for anyone else?

DH and DS are away for half-term and whilst I’ll miss them, I’m looking forward to not cooking on the evenings and will probably have toast or cereal or crisp sandwiches most evenings.

Not only that, I will have them by 6 and have the whole evening to myself.

What would you have in the same situation?

This was me tonight. I had an M&S ready meal - chicken and parmesan fettucine something - with green salad and tomatoes.

A bloody good steak (my preference is pan-fried fillet, medium rare), served with battered onions rings and chunky chips, whole grain mustard and ketchup. (I leave out the chips on most occasions as I'm trying to lose weight.)
Delicious either way, and quick to cook.

Lamb rogan josh in the slow cooker.

Jamie olivers ultimate vegetable lasagne. Takes 3 hours but worth the effort.

I go one way or the other. Either a huge plate of steamed veg, butter and salt (so pretty healthy minus the butter) or just dessert!

One of my quickest most comforting thing I get hungry for maybe 3 or 4 times a year - Idahoan instant mashed potato with bisto instant gravy ! Lashings of butter and salt and pepper. Sometimes do red onion gravy if feel like ‘cooking’ Grin

I found myself cooking dinner for just me last week - first time in literally years. I made brussels sprout vindaloo. Yeah, I know, strange - but DH hates sprouts and doesn't like hot curries - and I do. I enjoyed every mouthful!

Frozen med veg (cooked in the oven first), packet of spicy rice, tin of tuna mixed together with a handful of cheddar on top zapped in the microwave with some peri peri sauce or chilli olive oil over the too. Takes no time at all but it’s super tasty

Chorizo rice, pasta cheese and beans or a steak sandwich on ciabatta. Mostly depending on levels of effort I'm willing to deploy.
