What to have with fajitas...

Daughters usual Friday request for chicken fajitas, I can take or leave them so not overly excited.

Hit me with some fab sides or fillings to help jazz them up a bit.

We usually have a bowl of tortilla chips and some tex-mex dips with fajitas, sometimes I'll either get a pouch of Mexican microwave rice or some spicy fries (Aldi own brand Cajun ones are lovely!)

Potato wedges and coleslaw or nachos (tortilla chips, salsa and cheese, melted in the oven). To go inside - avocado, diced fresh tomato or black beans which have been sauted with red onion and pepper in a little oil with salt, pepper, paprika, cumin and chilli powder.

Chopped lettuce, spring onions and tomatoes.

Salsa, guacamole, sour cream.

Use the left over tortillas to make chips, bake them in a low oven until crisp, then you can make nachos with anything leftover.

Or quesadillas.

We have avocado/guacamole, salsa, sour cream, cheese, salad, sometimes tortilla chips. You could do corn or roasted veg. Mexican rice or a bean salad.

We usually have Mexican microwave rice, some sour cream, mashed up avocado and feta cheese (I know it doesn’t go technically but we all bloody love feta cheese)

I agree! Stick cubes of halloumi in a pan until all sides are golden then add either sweet chilli sauce or mango chutney for the final minute or two. Pop it in a wrap with lettuce.

We usually have a pouch of lime and coriander rice. Think it's tilda.
Obviously all the dips etc

You could do wedges or loaded skins.

Bake some tinned sweet corn (drain and pat dry) with some smoked paprika and olive oil.

Roast some peppers and onions with garlic power.

Make a homemade salsa.

Fry some black beans with some cumin, garlic and cinnamon and a splash of water.

What ever meat you are doing.

Serve with sour cream and smashed avocado. Yum

Any of the above although we often find that by the time we've stuffed the tortillas with veg/meat mix, lettuce, tomatoes, sour cream and salsa, after eating a couple other than a shared plate of cheesy nachos, we're stuffed.

Taking of game changers try cooking the veg/meat part in a dish in the oven instead of frying on stove. Takes longer but makes for a clean stove after and bonus is all the edge bits caramelise and the seasoning plus a little oil and meat juices make for a sauce that tastes smokier.

Thanks! So many tasty ideas, there is nothing here that I won't try, I've also sent across to my sister Grin

Tonight I will be having the Mexican rice and corn on the side, in the tortilla, it will be the fajita chicken, mashed avo, feta cheese, salsa and lettuce.

Next Friday I will try out some of the other suggestions, daughter is looking at me like Hmm

Thinly slice a red onion then mix with the juice of a whole lime and some sea salt. It makes a really nice topping in a fajita.

We always have rice bowls the next day, which is basically all the fajita veg, black beans, rice, salsa and dips in a bowl rather than having the tortilla wraps.

Love fajitas we usually have them with Mexican rice but definitely going to try some of these suggestions
