Which cake should I make?

I am going with my mum to see my aunt and uncle. I should say although we get on very well for some reasons my mums family is not close so we see them once or twice a year ( they live 80 miles away). I would like to make a cake to take them but my mum can't tell me what her brother does or doesn't like.

A Victoria sponge seems a bit boring. I make a great coffee cake but I know it can be one of those flavours you either love or hate.

What would you make and do you have any great recipes you would be willing to share?

Carrot or lemon drizzle!

Definitely lemon drizzle! Mary Berry has a great 1.

Lemon drizzle or ginger cake

The coffee cake sounds lovely but not to everyone's taste.
Could you make 2 ?
One coffee. One lemon drizzle.

I also make a cherry & almond using same recipe (glace cherries and almond extract to replace blackberries and lemon juice - I put nibbed sugar on top too, but you may not have that).

Really lovely moist cake and very easy.

Please come and visit me with your coffee cake. It's my favourite and I can never make it good!

How much almond extract do you use and do you do the same weight of cherries? It looks lovely.

lemon drizzle or chocolate are fairly reliable options

Whitney168 · 07/10/2021 12:28

@Coffeesnob11, I use a 200g of halved cherries - give them a wash and toss them in a spoon of the flour to stop them sinking.

Almond extract ... ermmm ... a splosh LOL. Teaspoon maybe?

I know you have all been in suspense waiting so I wanted to let you know I made a lemon and blueberry cake and they loved it. I also made the almond and cherry yoghurt cake for us and @Whitney168 it was amazing one of our favourite cakes ever so thanks for the recipe

It’s a good’ update, isn’t it - quick and easy to make, and keeps well (if it lasts long enough.😆) Really lovely in its original blackberry & lemon form, too.

Whitney168 · 12/10/2021 22:22

*good’un, not bloody good update!
