Healthy Weekly Menu!

I'm looking for some inspiration for our weekly meals! If you have a good, balanced diet, what meals do your family have in a week? I'd love to make use of my slow cooker now the weather is cooler, but i also don't want to eat too much meat in the week.

Would love to hear your family's healthy menus Smile

I do a bean casserole thing in the slow cooker which we usually have on top of a jacket potato. If you chop it all up the night before it’s just a question of chucking it in the slow cooker in the morning

Dice carrots, celery and onion then I’ll normally do some bigger chunks of butternut squash or sweet potato as well plus any odds and ends of veg in the fridge
Couple of cloves of crushed garlic/lazy garlic
Shake of chilli flakes
Approx 1 tbsp paprika and 1 tsp cumin
2 tins tomatoes
2 tins beans (haricot/cannellini/butter beans) or lentils
Top up with about 200ml veg stock just so it’s a bit less dry but don’t use too much or it will be watery
Chuck in a heaped tsp of chutney/pickle/red onion marmalade or whatever you have along those lines
Leave on low until you get home Smile

We’re veggie so on healthy weeks we eat mainly vegetables.

Lots of veg curries, stir fries, chillis, bean stews, tagines etc..
I don’t use my slow cooker much but I do batch cook and freeze a lot.

Tonight we had this bean stew with jacket potatoes

These sound great! Bean stew and jackets sound right up my street!

The only thing about slow cookers is that usually I sauté stiff first, which I just don't have time to do in the morning - can you just Chuck it in??

I second the burnt aubergine chilli recipe above: I chop up the aubergine and roast it for 30 minutes instead of burning/grilling it though. And use half the amount of stock on the recipe.

I’m petrified of slow cookers although I don’t know why! Dh loves using it.

This week we are having (we are vegetarian)-
Coconut Dahl and rice
Veggie chilli with jacket potatoes
Spicy tomato linguine
Aubergine parmigiana
Teriyaki tofu and rice
Fajitas
Pizza!

2 nights are really lazy meals as they are busy nights. Obviously the pizza could be healthier but I like pizza.
I’ll do extra Dahl, chilli and tofu to freeze and reheat for my lunches next week.

That lentil pie sounds lovely.

What sorts of things do you enjoy eating op?

Tonight I’m making sweetcorn fritters to go with the leftover Brazilian black bean stew and some brown rice. These ones are very easy and you can freeze them.

@PurpleDaisies we love fish and seafood. I don't like pasta or rice, particularly, but DH does so I don't mind having one pasta and one rice dish per week.
