Urgent. Cooking for recovering alcoholic. Substitute for white wine please!

Fright in middle of cooking a Ragu with pork and veal (it’s a blonde Ragu ie no tomato’s and uses milk)

Recipe call for 500 ml of white wine

What’s a brilliant substitute for this kind of meaty pasta sauce

Surely the cooking will burn off the alcohol so just use wine?

I'd say some verjuice but that's a bit niche.

500 ml is also a lot!

(Although tbh the alcohol would probably burn off in the cooking. I understand not wanting any booze to come near it though, I’m the circumstances.)

A really good quality stock.

Don't use alcohol free wine.

I do chicken stock and lemon juice if I don’t have white wine in. It’s not the same, but it’s ok.

Sorry, cross post! I’d go for similar quantity since presumably you need the volume of liquid. But maybe half and half juice and stock? Bit of balsamic or Worcester sauce for depth of flavour?

An alcohol free wine would work perhaps? Or if not, grape juice and a splash of lemon juice to counteract the sweetness of grape juice?

I’d choose a different recipe. There are lots of lovely things to make that don’t include alcohol. A splash you could replicate but 500mls of anything else will dramatically change the flavour.

Someone i know almost likely himself, lost the family home, practically destroyed his family - is slowly emerging as the wonderful man he was pre drink.

Even if I hadn’t have promised @Aquamarine1029, I still wouldn’t have put half a litre of white wine in a dish for the 3 of us.

Anyway - thank you all so much. Re the stick… chicken? (It’s pork and veal)
