Frozen Diced Lamb

I've got some frozen diced lamb and want to make something quick and easy with it in the slow cooker today. Was thinking something Greek maybe. Any recommendations welcome. Thanks

Not Greek but Irish stew ! Chop onions potatoes and carrots quite chunky roughly the same size as the lamb.salt,pepper and plenty of thyme , enough stock to not quite cover the ingredients then on low all day until tea time
