I thought any waste is transferred from the baby via the placenta. They don't do the toilet into the amniotic fluid or they'd slowly poison themselves

I am wrong. They apparently do pee in the womb but don't usually poo in it

Nope, babies do pee in the womb... most if not all amniotic fluid by the end of pregnancy is baby urine.
Baby swallows their own urine in there too.. gross but true.

amniotic fluid is baby wee. You wouldn't see it coming out, as urine and the fluid around the baby is the same density and will be the same colour. Its why if there isn't enough fluid, kidneys are checked (as well as that it's not leaking out).
Poo shouldn't happen in utero, but can do near term. It can be a sign of distress and can cause problems if baby inhales it.

The sonographer noticed dd having a wee at one of her scans by noticing the bladder shrinking, I don't think you can see the wee coming out.
