Please inspire me with these ingredients

I've got a butternut squash, 4 yellow peppers, 1 orange pepper, 2 courgettes, some sweet potatoes and the usual herbs and spices etc...

What could I make with these ingredients that could be batch cooked in the freezer for weekday meals? (I may do a pasta sauce but looking for other suggestions!)

I do also have tins. And can go to the shop too! Just looking for ideas that I can use the above ingredients up!

Do you have coconut milk? Could do a nice Thai style curry.

I'd do a vegetable curry. Chop everything up and simmer it in a frying pan with coconut milk and spices.

I like golden veg soup, brown some onion then Chuck in everything except the courgettes, plus carrots if you have some, garlic or garlic powder, veg stock cube, some herbs or cumin works well. I also like to Chuck in a handful of red lentils. Cover with water, Cook it all for half an hour or so and then blend.

Definitely red thai curry. Sweet potatoes & butter nut squash work really well. If you are not vegetarian could add prawns. Nigella says so. Wink

Sounds like a veggie chilli to me. Have you got some beans in a tin?

You could cut up all the veg, add an onion and roast it all in the oven with a bit of olive oil.

Then cook in stock until soft. Blend up into a smooth soup. Add spices as you wish. Some mild curry would be nice.

I make a similar soup with butternut squash and cauliflower.

Although DH is an official cauliflower-hater.

Roast in the oven then use to make a savoury tart with some ready-made pastry. Or add to risotto.
