Does buttercream need to be in the fridge ?

I’ve made dh a cake for his birthday. Victoria sponge with jam and buttercream. I wanted to hide it away until tomorrow but I’m now thinking it might have to be refrigerated ?

He will be home in a couple of hours 👀

Have you already iced it?

I'd personally put in a Tupperware and leave out of the fridge. I find the fridge dries sponges.

I don’t refrigerate cakes iced with buttercream.

It depends how warm the hiding place is. Would you leave a pat of butter in the hiding place?

daisypond · 24/09/2021 16:01

Don’t put it in the fridge.

I never have done and not had food poisoning yet

SuperDuperJezebel · 24/09/2021 16:05

Definitely don't put it in the fridge, it makes the buttercream 'sweat'.

Elasticatedwaist · 24/09/2021 16:24

I’ve put the buttercream with jam between the two layers. Planning to give it to him tomorrow. Hopefully it will be edible !

I've never put buttercream in the fridge, just don't keep it somewhere warm or it will melt.

dorothygaleandtoto · 24/09/2021 16:30

No, pop it in a tin and don't let it get too warm - a cupboard will do.

Ozanj · 24/09/2021 16:31

Buttercream is just sugar and butter. Doesn’t need refrigeration, but at the same time don’t put it anywhere too warm either

Peanutsandchilli · 24/09/2021 16:49

Put it in a tin and leave it somewhere cool. It'll be fine. Buttercream last for ages out of the fridge.

Elasticatedwaist · 24/09/2021 17:02

Great thank you. I’ll hide it in the cupboard 😀

The only time I put buttercream in the fridge is when I make too much and need to store it. I have some in the fridge now. A decorated cake that is going to be eating in the next few days can definitely be kept at room temperature.
