Inspire me. What delicious things can I have for dinner?

I'm on my own for the evening and have decided to have something indulgent for dinner

I live near Waitrose and Sainsbury's so can pop and get anything. Must be vegetarian and I don't like curry or chilli. Could go for a takeaway pizza but had that relatively recently

Ideas?

Following for ideas. DP and I tonight but I cannot be bothered to cook so I was thinking some picky bits maybe but need some inspiration

PieMinister pies are my go to for an easy on my own supper

OnlySpam · 18/09/2021 16:14

Grill a block of halloumi and make a big salad with pomegranate seeds. A pitta on the side. I’d have a nice bottle of crémant and get something lemony for pudding.

greenlynx · 18/09/2021 16:24

I would go for filled pasta and salad from Waitrose

My choice would be between:
Waitrose Pumpkin & Pine Nut Fiorelli, Soli butternut squash & sage ravioli or mushroom ones
Dell Ugo Beetroot & Goat's Cheese Fiorelli

Hmm yes - filled pasta just tossed in a little butter and oil with lots of black pepper. That could work well

I don’t go delicious but quick, fresh pasta is perfect for that.
Either pasta Arabiata or [[

Link fail Gnocchi with mushrooms and blue cheese

I’m having gnocchi with garlicky greens in a spinach and ricotta sauce. Have a bottle of white but now wishing I had the creamant mentioned above!

Don’t forget scattered Steve’s leaves (any combination) which are on offer now. Lots of joy, no fuss and almost zero washing. I personally would add a bottle of Merlot to it.

Baked gnocchi with sage and cheese?

desperate4spring · 18/09/2021 17:55

Baked camembert with delicious dipping things!

I am so envious by the way. Last Oct when the rule of 6 existed, DH room our 3 DC to stay with his parents for a few nights. It was such a luxury only having myself to feed!

maddy68 · 18/09/2021 18:48

Baby squid lightly sauted over some garlic crushed potatoes.

(That's what I'm having tonight) -prepared by my local restaurant-

It's actually very simple food to cook and delicious

InnPain · 18/09/2021 20:28

I’m a bit late but any main from M&S that you fancy will not let you down

TheChosenTwo · 18/09/2021 20:40

Oh my god when it’s just me (rare!) I don’t bother, maybe just a bag of crisps!
I’m such a lazy cook and can’t stand the thought of messing up my lovely kitchen just for 1 person.
If I had to, I’d probably go for a seared tuna steak and an avocado and tomato sort of salsa on the side. But I’d never be arsed to make that sort of effort Grin

bearlyactive · 18/09/2021 20:44

Another vote for camembert, with a little french stick to dip in it, with plenty of salted butter.

PurpleDaisies · 18/09/2021 20:47

I’d do a hotel picnic at home. That’s what I treat myself to when I’m away for the night but don’t want to eat out.

Nice bread. Lots of anti pasti from the deli counter. Houmous. Salad. Maybe a mini quiche or samosas or something. Some sort of gu pot for after.
