Tinker Tailor Soldier Spy, 1979 TV series with Alec Guinness. Only found out recently that the composer, Geoffrey Burgon, also did the Brideshead Revisited music. Similar sound in both.

I also loved The Persuaders. White Horses had a good theme too.

Don't think anyone has mentioned Randall and Hopkirk (the original series not the remake).
I also liked the Horse of the Year show. (Theme courtesy of Mozart's musical joke)
