Quick Evening Family Meals - Vegetarian Friendly

Have to go back to office next week. Full time, not flexible like it was during lockdown.

Aside from pasta, what else can I do that will appeal to the vegetarians and meat eaters in the family?

Is freezing before something you could do?
Some of these can be frozen before, some just do on the day.

  • Chilli and rice (soya or beef)
  • Curry (same sauce for all then add chicken/more vegetables/soya pieces/tofu)
  • Hot wraps (stir fry meat/soya pieces/tofu/vegetables add sauce and cheese)
  • Hot dogs
  • Sausage hot pot
  • Cottage Pie
  • Jacket Potatoes (you can get those pre cooked ones, if you need to)
  • Stir Fry (noodles/sauce)

Get yourself a copy of the Green Roasting Tin by Rukmini Iyer. I do stuff from there (and the Quick companion volume) all the time, and you can just drop a chunk of meat/fish on top if need be for non-veggies. Fantastic variety of very, very easy to make stuff.

We like a big stir fry-wokful of stir fry veggies with either just ginger, garlic, soy sauce or those things plus a sachet of stir fry sauce, noodles in hot water then into the veggies. Two frying pans, one for chicken, one for quorn chicken, then divide the wok between the two frying pans. It’s not authentic but it’s quick and tasty.
Also pataks korma sauce over chicken /quorn chicken, with rice and whatever veg are hanging around.
Fish and chips once a fortnight, fishcakes from the freezer with mash and veg on the opposite week. Everything can be on the table within half an hour unless you ponce around in the manner of Keith Ffloyd, like dp does
I also do a mass cottage pie filling every now and again, so a quick pan of mash while the oven warms up can make a real homemade comfort meal on the table within about 40

My week this week (2 veggies and 2 meaties):

Today: Tesco ‘wicked’ garlic kebabs for veggies and chicken kebabs for meaties, rice, salad, pitta.

Tues: lentil Bolognese (double portions made in the slow cooker, v easy, can give recipe if you want it)

Weds: bbq if weather holds out - Linda McC mozzarella burgers and beef burgers and salad.

Thursday: tinned veggie chilli (stag) made into enchiladas with rice

Friday: lasagna made with leftover lentil Bol, garlic bread

Saturday: probably a takeaway as a treat but if not, I often make two home made pizzas (bbc good food base, super cheap) one margherita, one meat, salad, garlic bread.

Sunday dinner is often something like toad in the hole - divided into two dishes - one Richmond veg sausages, one meat. Or a slow cooked gammon, potatoes and veg and cauliflower cheese, veggies have a veggie option such a a quorn fillet or kiev.
