Easy/ quick toddler meals

Hello, just looking for inspiration on toddler meals for my 2yr old. Now he isn't getting dinner at nursery I'm struggling to have variety. He eats lots of pasta dishes (with veg/meat in) with us and feel I need to switch it up a bit.

As much as I can’t stand her Lorraine Kelly had a great book years ago for toddler meals.

Some of our regulars that aren't pasta:

Quesadilla's are always a hit here (and very quick). Basically a tortilla filled with meat, veg, cheese or whatever you have and toasted on a dry pan. I usually serve with a side of crunchy veg sticks.

Steamed salmon is healthy and really quick. I always have some in the freezer.

Fish cakes can be made in advance and frozen.

I just remembered I have an Annabel karmel book I used to use which has some good stuff in but I will have a look at that Lorraine Kelly one too, thank you.

@sqirrelfriendsive tried quesadillas a few times now and he doesn't go for them! I don't know why! I end up eating them all lol.
Also all the filling comes out when I flip them over in the pan, not sure how to stop that 🤔

He was a fantastic eater but this week he has barely had anything of the stuff I've made :(
Last night was gammon pieces, potato salad, steamed broccoli, sweetcorn and broad beans.
He only are a few ham pieces

Jacket potatoes are perfect. Cook in the oven the day before then reheat the next day with tuna, cheese, beans, coleslaw etc.
Omelette or fritata
Salmon with rice noodles and stir fry veg.

Not quick but cottage pie and fish pie can be batch cooked and reheated in the microwave with a side of peas for a very quick dinner.

Egg fried rice with veg

Wraps with cooked chicken, peppers, onions and guacamole.
