Mattresses which aren't too firm and too hot!

I've been researching mattresses and threads on mattresses and still at a loss. Had 3 mattresses I think in *n years...arghh...and none of them suit. I get aching back/shoulder with one we have which I think is too hard (medium but hard for me...had it a few years and neber bedded in...is Slumber thing one.
Been to Dreams and liked the Dreams actigel plus harmonic gel mattress but then saw some bad reviews on it...sagging after a bit etc. Looked at this one too

again with gel in it. Can't stand memory foam as too hot. Looked at Simba and Emma too but also q a few bad reviews.
Anyone help?! New bed arrives in 2 to 3 weeks and is a king (we had a double before) so need to sort!

We bought a Harrison Spinks Hollyhock seasonal turn mattress recently having had Tempur for 15 years.
Highly recommend, we went for the firm as DH is 6’2 and although I was initially concerned it’s lovely.

Sealy hybrid. I wouldn't have anything else now.

We have a gel topped thing. It's hot. Not as hot as memory foam, but still warmer than a standard mattress.
I'd forget about all the fancy top layers, and go for a traditional sprung mattress.

After years and years of having memory foam toppers and other synthetic duvert type ones I just had one too many nights baking hot and ditched it. Thought the mattress would be too firm and take some getting used to, but it was fine and such a relief.

I would quite like to try a wool topper when we change our bed, but not necessarily.

We have a double bed, but are changing it to a kingsize soon. The mattress we are thinking of getting has various layers including a wool layer and it sounds perfect for us.

I have wool pillows and wool duvet and I do find they regulate heat quite well, so wool seemed like a good option.

I forgot to add... neither partner or myself are particularly tall (he's 5 ft 10) or big!
