Low prep healthy meals

So we've not got a kitchen. This was ok when it was supposed to be for 4-6 weeks however it's now looking closer to 6 months. I'm already sick of takeaways and microwave meals so need some low prep healthy meal ideas. We have a small 2 ring hob, an air fryer and a microwave. The biggest issue is prep space- we have 0. Zilch. I have to put the chopping on top of the microwave which is on top of the fridge, the hob is on top of the freezer. We're living out of one room so can't put a table in to use. So 1 chop meal ideas? Any quick fix solutions?

I would probably make a lot of frittata/omelette type dishes.
Spanish omelette made with tinned new potatoes is nice.

Also maybe Asian style noodle soups?

We've got one in storage, but it's the prep of everything that's the issue, all the chopping.

Frozen pre chopped veg is your friend here - onions, soffrito mix, sliced peppers, soup mix - all good.

Those trays of pre chopped broccoli and cauliflower for the fridge are also good.

(frozen carrots and green beans are awful though)

(I'm not just lazy Grin I have hypermobility and am rubbish at chopping, so have investigated all the pre chopped stuff)

Buy it pre chopped? You can get soup and stew packs for instance and pre diced meats. I know its expensive to do this but as a break.

Do you like crab? You coukd do a tinned crab linguine with some lemon

Frozen/pre-chopped vegetables. Some kitchen appliances also chop pretty well without the need for a cutting board.

Liking the sound of prechopped stuff. I generally cook from fresh (including chopping) so this is about foreign to me.

I also like the idea of crab linguine.

Keep the ideas coming. This is making me feel so much better about the situation! Less prep means less washing up, which we have to do in the tiny bathroom sink!

Posh soup & crusty bread
Jacket potato & beans & cheese
Frozen paella or risotto - Waitrose do nice ones
Chicken with mushroom/onion fried then mix in creme fraiche & mustard & serve with rice
Omelette & salad & new potatoes
Steak with salad & chips

Camping gaz do a nice cheap portable bbq which would be good for steak or kebabs or something
