Best veggie chilli recipes please!!

Need to make a veggie chilli this week for non-red meat eating friends coming for dinner.

Assume I can just do my usual chilli and leave out the meat but is there anything else I can do / sub (not quorn) to make it extra special?

For sides - salad, grated cheese, soft taco bowls etc. I need to prep ahead and am scared to do rice for food poisoning risk!

Replace meat with a tin of mixed beans and a tin of chilli beans for a five bean chilli

Do some nachos as well. Tortilla chips, chopped jalapeños, salsa and grated cheese. Grilled. Yum.

I've just realised you said non red meat eating friends. I made a chilli with turkey mince recently that was so good. You couldn't tell the difference IMO 😊.

This Felicity Cloake recipe is the best vegetarian chilli I’ve made. The chilli paste is hot though! I normally only use half of it in the recipe and that’s a good heat for me

I make a good vegan chilli for my daughter.

Three red bell peppers & a red onion blitzed in food processor until finely chopped.

Fried with garlic in oil for 10 mins.

Add a cup of red lentils. And a cup of TVP rehydrated with veg stock although I don't always add this.

Whole carton of passata, tomato purée and red kidney beans and a teaspoon of sugar.

Add handfuls of cumin, pepper, oregano, Dark chocolate, salt pepper to taste. Simmer for 25 mins until lentils are tender but have bite.

Serve with rice, vegan tortilla chips and salsa.

Also came on to say Burnt aubergine chilli. Although I've given up on charring them on a gas flame and now stick them under the grill.

Quick question - the burnt aubergine chilli. Can I just make it the same in the slow cooker? Or do I need to add/deduct liquids?

@BernadetteRostankowskiWolowitz I made it in the slow cooker, but having read the comments reduced the liquid amount to what was recommended there

I would reduce the quantity of stock and top up if it looks dry. Some of the comments say that there is too much liquid anyway.

Ah great! Phew.

I'm making double the amount, but have still just put 500ml stock and will keep an eye.

I'll add the burnt aubergine for the last 2 hours.
