I challenge you to find anything quicker or easier than this.

One of my favourite easy puddings is a raspberry and lemon curd sponge.

Depending on size of your cake tin- 4oz butter, SR flour, caster sugar and 2 eggs. Mix well and pour in your tin. Then drop raspberries and tea spoons of lemon curd randomly in the cake mixture. Bake in the oven for approx 20 minutes. Take it out and turn the cake upside down. Sprinkle with icing sugar and serve with crepe fraiche. Divine!

Buy meringue nests. Fill with whipped cream. Pile raspberries or strawberries on top.

DD and her friends used to like 'chocolate fondue' which was basically breaking up a bar or two of chocolate into a microwaveable bowl, adding a good splash of milk and then microwaving for a half a minute at a time until melted. You can add a splash more milk if it needs it and give it a good beating at the end. Chop up banana and dip with strawberries and other fruit that goes with chocolate. Marshmallows are nice for dipping too 😁

Bag of frozen black cherries, 300ml full fat Greek yoghurt or whipped double cream, heaped tablespoon of icing sugar, teaspoon of almond essence. Put them in the blender together until they turn into black cherry ice cream. Serve with almond cantucci biscuits. Takes 5 mins to make with yoghurt - a bit longer if you have to whip cream first..
