What's your best potato recipe?

Mine is par boiled new potatoes, crushed with back of a fork, olive oil and lots of salt and pepper into the oven. Squeeze of lemon juice over them before eating. Delicious, what's yours?

So many! How to choose?

New potatoes with butter and salt.
As the OP described.
Fritattia (that's tonight's tea).
Jacket potatoes with butter & cheese.
Roast potatoes.
Homemade potato wedges with salt & pepper, or with paprika.
Mash potatoes with peas & wholegrain mustard mixed through.
Dauphinouse potatoes.
Chip shop chips.
Home made chips.
Fries.

Nope, can't pick a favourite OP.

Rosemary and garlic potatoes.

Dice potatoes, melt a knob of butter with a tablespoon of olive oil in a large frying pan, and gently fry the potatoes. Add some finely chopped fresh rosemary and garlic, and keep turning until the potatoes go opaque, and take on a bit of colour. Put them in a single layer in a roasting tin, sprinkle with a little finely grated strong cheddar or parmesan, and stick in a medium oven for about 20-30 minutes until golden brown.

Goes with most things.

I use Maris Piper (my choice) I think he prefers Red Disirei (sp)
And I use sunflower oil

Colcannon especially around Halloween. Champ any time if the year. I could happily eat bowls and bowls of either. The more butter the better.

My favourite canapé is Stilton potato cakes. Mashed potato mixed with crumbled Stilton, parsley and egg yolks then baked.

Chunky wedges boiled for 10 minutes then drizzled with olive oil, salt and chilli flakes. and air fried for 15 minutes until just starting to burn along the edges. Delicious with sour cream and chives. This is our usual side dish with a baked gammon joint.
