What is your favourite healthy salad to make at home?

Just doing my online order and I am appalled at how little fruit and veg I’m eating at the moment!!

What easy salads do you make to eat at home? I’m the only one in my house who eats most salad type things so I need quick and easy as I’m only making it for me!

Rocket, red onion, balsamic vinegar and shaved Parmesan

Quinoa (I buy the vacuum packs by Merchant Gourmet) with red onion, red pepper, cucumber, beetroot, lemon juice, a splash of olive oil and a splash of red wine, with feta or with baked/grilled/fried halloumi

Beetroot, cucumber, red onion, lemon juice and flatleaf parsley (lovely with a jacket potato and something cheesy!)

Salsas to serve alongside a chilli/curry etc
Deconstructed guac - red onion, avocado, coriander, lime juice, red chilli

Mango, red onion, lime juice, coriander, red pepper

Hard pears with lime juice, red onion etc

Plums with lime juice, red onion etc

Spiced cauliflower and chickpea, on a bed of leaves, thinly sliced red onion, cucumber and celery with diced mango and a mint and yoghurt dressing.
Water melon, mint, red onion and cucumber (feta optional)
Apple, celery, spring onion, finely chopped gherkinsand fennel with mix of natural yoghurt and mayo ( 80:30) Stilton and walnuts optional.
Charred pineapple, sweet corn, peppers, shredded carrot, chilli, coriander and plenty of lime juice.

I love salad!

Mine is pretty basic and boring but tastes good.

Pea shoots
Tomato
Cucumber
Sweet Peppers
Spring Onion

Then I mash an avocado into it... which gives it the moisture and fat you typically get from a dressing.

Much healthier than using a salad dressing with vegetable oil in it.

remuslupins - that reminds me of a starter i had many years ago....something like pears halved and then stuffed with blue cheese - sounds iffy but was lovely

i like beetroot, lightly cooked broad beans, goats cheese and dressing.

Anything with rocket in. I like to add baby spinach leaves and tomatoes, and drizzle with olive oil.

Anchovies are brilliant in a salad and will liven up almost anything.

I had a pizza once with pears and honey on it - delicious!

I’m absolutely addicted to garlic roasted broccoli at the moment, make a pan of it and add to salads through the week

Oh no you don't need to make any. I'd bring 2/3 of a massive restaurant salad home for the week...Wink
