Meals to batch cook/quick meal ideas?

Starting university in September and need meal ideas that are quick or can be batch cooked! Any ideas other than the usual bolognese or chilli?

Chickpea curry is a favourite in our household, stir in a bag of spinach/ chard/green beans before you serve up to add another veg portion. We have it with rice or a naan bread each

Pasta with spinach & ricotta sauce: just cook some chopped onion and garlic (and pine nuts if you want to be fancy), add chopped up spinach for like 3 minutes, then add 2-3 spoonfuls ricotta and mix. Pasta sauce done Smile

Also, buy premade freezer pizza dough, you just have to stretch it into a pizza shape, add tomato passata, toppings and cheese, in the oven for 12 min, done.

There are loads of videos on YouTube that do meal preps for either slow cookers or Instant Pots. You just prep the meals, freeze them then throw in the pot when you want them.

I roasted a load of Mediterranean veg last night, served with baked or griddled halloumi and couscous. Leftover veg is currently being added to a quiche and what remains tomorrow will get chucked in a tomato sauce and served with pasta, or rice and salmon or chicken.
