Dinner for one

I am unexpectedly home along this evening and get to eat whatever I want!!!!! (DH is a vegetarian and DC1 has autism and sensory processing disorder which makes cooking meals tricky).

What do I cook???!!!!!

I am tossing up between a proper Beef Wellington or a chicken or prawn korma (out of a jar) because neither of these things would pass muster in my house.

mmmmmm........ inspire me with your own choices please!

Definitely go for something only you like, but nothing too much effort.

Steak, chips, salad and grilled tomatoes
Sea Bass with a herb butter, simply pan fried, tender stem broccoli and green beans.
Proper tuna nicois with tuna steak
Linguini with crab, chilli, fresh herbs, cherry tomatoes and garlic.
Tandoori chicken skewers, naan bread, green salad with yoghurt dressing.

I like stuffed portobello mushrooms
Smoked salmon, cream cheese and dill pancakes
Stuffed chicken breast wrapped in prosciutto
Crab linguine

Getting to eat what you want should not be so rare that it's something to get excited about or you only get to do it when you're alone.

Going forward, why not have DH cook for himself and DS at least once a week and you make something that you want for you?

I would buy 6 fat scallops with roe and fry them in loads of butter and lemon, and eat them with home-made double-cooked chips, and a salad. Scallops are too expensive to feed to a family but lush for one person!!

Alternatively I would make a really nice steak, peppercorn sauce, chips and salad

Or buy a chicken breast, make a massive chicken schnitzel. Eat with gherkins and a fennel and dill salad.

Basically - eat all the meat Grin

I went for prawn korma in the end! But the scallops sound lush and I have made notes of the others. :)
