Goats cheese and red onion bake.

Don’t fancy salad as have had that every day this week! Not sure if I should double carb. Feeling very pregnant and unimaginative!

What else is in it? It’s it literally goats cheese and red onion? If so, ciabatta or maybe new potatoes if salad is off the menu.
Double carb is always good.

Salad would be my first thought but, if not that, what about a warm rice salad/veggie thing? Like a savoury rice? Or cous cous?

I've just made cauliflower rice, which was an annoying faff, but that would probably go well and would avoid double carb if you wanted to.

Or do just that. I do not recommend making cauliflower rice if you're feeling lazy.

I've had to wait for the (admittedly small) food processor cool down at least 3 times, it's gone fucking everywhere and I now have enough cauliflower rice for the rest of the week.

Definitely. There's only me that will eat it anyway and it looks like I'm having it 3 times a day until the middle of the week. And that was after I'd thrown away about a third of the cauliflower because it had gone a funny colour because it had been in the fridge about 2 weeks.

Oh well, at least I now have a lovely low carb meal plan to kick start some much needed weight loss.

Cauliflower tots are lovely. We made larger ones than this recipe. I'd put some mustard in next time for a bit more flavour. We used a microwave baked potato instead of faffing about baking one as you don't use the skins.

Thanks @iklboo that does look nice, I think I'd leave out the xanthan gum because I have no idea what it is or where to buy it.

I might have to put cheese in though, cheese is always good.

@BarbaraofSeville - you can get it online or at Holland & Barrett. It's a thickening agent so cornflour would work just as well. It's just to bind the mix a little so not essential at all.

Green beans with a smashed clove of garlic, a drizzle of walnut oil, and a splash of balsamic vinegar.

A friend showed me the recipe and it is delicious.
