Just looking at my meal plan for next week which includes shepherds pie and spaghetti bolognese and thinking I don’t fancy those while it’s this warm.

What are your go to recipes for lovely summer evenings when it’s too hot to cook properly?

Veggie options
Bulgar salad (onion, cucumber, olives, parsley, chickpeas) and chilli honey halloumi
Any form of tacos with fresh salsa
Cesar salad with new potatoes
Asian cold noodle salad
Greek salad and some nice bread
Asparagus and pesto tarts with hassle back new potatoes
Buffalo cauliflower wraps
Green veg pasta with mascarpone and lemon and herbs

Bbqs every night for us.
Usually some marinated meat/fish served with an assortment of side salad things, roasted peppers, tabbouleh, Greek salad, mozzarella tomato and red onion, that type of thing.
Quick, tasty and very fresh flavours.

Slow cooker stuff - bolognese or curry or chilli, rather than stew though. Saves cooking it in the evening. You can also make bolognese/chilli base into taco filling, serve with salad, guacamole, salsa and sour cream or just cheat and get a crappy old el paso kit.

Thin steaks (beef/pork/chicken) with air fryer chips or chips collected from local takeaway and salad/chargrill type veg.

Big tray of cut up chunky sausages, potatoes, and whatever veg is to hand, roasted for about 45 mins to an hour and served with garlic bread and salad.

I made a nice seafood pasta last night.

You fry up some salmon and prawns in butter with garlic then remove them from the pan, add a little milk and plenty of cheese and stir till it's melted in (I used parmesan), add lemon juice, lemon zest and some herbs (I used thyme) then add the pasta plus some fresh chopped tomatoes to the sauce and mix it well. Add the seafood on the plate so it's fairly distributed lol.

Chicken teriyaki with glass noodles and stir fry veg

Love all these ideas and love summer food. I find I can get away with very simple food in the summer eg pasta with fresh tomatoes basil and goat cheese. Or halloumi salad. Lots of lovely salads basically but substantial ones with toasted nuts and fresh herbs like mint. And lots of barbecues.
