I'm applying for a job in a kitchen and I need to brush up on my kitchen health and safety rules and food hygiene etc. I used to work in a school kitchen and when I did a course for it they gave me a book about it, but I think I've chucked it 
I know most of it is just using your brain and common sense but I'd still like to brush up on it properly.
