Leftover potatoes, peppers and tomatoes

Yesterday I roasted chicken legs and potatoes in a little olive oil infused lightly with shallot and a little garlic. Also grilled some peppers and cherry tomatoes (not in oil/no seasoning).

Today I have leftover cooked potatoes, peppers and cherry tomates. If possible, with the least effort, I want to make them into a very simple salad that I can bung in Tupperware and take to the park for a super simple picnic.

Was thinking: add some salad leaves and olives (both of which I have already) with a little lemon juice and olive oil? Will this work?

Any other ideas? We're not big mayonnaise fans (and neither is the weather).

Bit more of an effort but I would make a tortilla, which transports well.
Serve with a tomato salad

Have you got any feta or tinned fish? I'd use either of those a protein and salt hit.

When I stayed with a family in Spain they used to send me off with Tortilla for lunch. As soon as it’s ready wrap in foil and by the time you come to eat it it’s still warm
I’m not a food scientist though so don’t come after me if you all die

I would absolutely eat with leaves, olives and a bit of dressing. Feta would be a nice addition but would be great on its own...

Chip the potatoes, add mayo and chives or spring onions for a potato salad. Mix in the peppers and tomatoes.
