Smoked salmon & aioli

Sardines in tomato sauce

Bacon & mozzarella

A couple of drops of sesame oil (not too much), a sprinkle of chili flakes, a bit of sea salt - mash and then spread on buttered toasted sourdough bread! Yum!

Mayo in the avo, game changer.

Completely agree! And then a couple of rashers of bacon on top of the avocado.

Good drizzle of sriracha sauce and a poached egg with too much salt. Some lovely suggestions on here!

Chilli oil, poached egg and some feta.

Chopped mini tomatoes and finely chopped feta on top of the avocado sprinkled with chilli flakes and fresh line juice plus sea salt and pepper.

Equal parts grated cheese, carrot and chocolate at the very end (has to be white chocolate-creamier)

Lime juice, chilli flakes, salt and pepper on Aldi's whole grain sourdough topped with a poached egg.

Anchovies sound good though too. Might try them this week.

Spring onion chopped finely with chopped cherry tomatoes on top of the avocado on rye bread with ground black pepper on top 🙂

My favourite is toast, thin spreading of mayo, avocado, slice of smoked salmon, lemon juice and black pepper.

Toast, chilli jam, mashed avocado, lime juice, salt and pepper, chopped cherry tomatoes, fresh coriander. Possibly with smoked salmon on the side, or mixed green leaves with lemon oil

Multigrain toast,avocado and everything bagel seasoning

Crushed garlic, finely chopped red chili, diced tomato and spring onion, lime juice, salt and a glug of olive oil. Avocado kept chunky, not mashed till smooth.

Sriracha

I just put loads of black pepper on

Before I went vegan, I used to have avocado toast topped with goats cheese and honey, that was lovely. Now, I mix mashed avocado with sriracha, lemon juice and lots of salt and pepper - and top it with those roasted peppers from a jar if I'm feeling fancy

Salt black pepper and lots of chilli flakes and you’re good to go

Throw the avocado in the bin, eat the toast.😂

Granary toast, smashed avo with lots of salt, black pepper and lemon juice. On top, smoked salmon and a poached egg. More salt and pepper. Glorious.

Some of these sound brilliant! Glad the suggestion of anchovies appeals to several of you. I am the only person (currently) in my house who likes either avocado or anchovies and DH and DS shudder slightly when they watch me make lunch for myself.

One of my DDs would always try anything as a child - and she and I still joke that if we went out for lunch somewhere wanky we'd be looking at each other and going Ooooh! Aardvark and Anchovies! Let's try that! in excitement.
