Inspire me with your summer dinner recipes please!

As I was making koftas for dinner, it occurred to me that I really need some better summer dinner recipes. Something light, flavoursome, quick and not a salad, purely because I’ll get accused (by the male part if the family) of feeding them rabbit food.
What do you have for dinner on a hot Sunday evening like this (apart from barbecue or takeaway, obviously)?

OMG was just coming on here to start this very thread! Sick to death of the "What's for dinner?" question. Have completely lost interest in cooking over the last few months and just want to scream an answer along the lines of " How the fuck do I know? Why is it always me who has to come up with a meal plan".
Desperate for quick easy suggestions, inc some vegetarian ones.
Today we had tuna pasta salad.
Yesterday a chicken, pepper and potato traybake.
HELP!

I do a ploughman's with enough lard heavy pastry to sink a battle ship for dh.

While I stick to my traditional pickle, apple, crumbly cheese and French bread.

Otherwise pizzas with crudités and dips.

We had spatchcock chicken today with garlic, herbs and lemon butter rubbed into the skin. Just pop it in the oven and leave it to cook for 1hr 10 mins.

Then I let it rest and cool a bit for about 20 mins and served with slices of buttered ciabatta and slices of really nice ripe tomatoes with a little olive oil and salt on.

@dementedma I can relate to this! I feel that through lockdown, then several periods of isolation for DP/DS, I’ve done nothing but plan or make food.
We’re currently using hello fresh but even that’s getting a bit boring (and still leaves 3 dinners to plan!)z

I do a lot of cooking in my instant pot instead of turning the oven on when it’s hot.

I like to cook risotto, soups, daal, lentil chilli etc.
Some evenings we just have soup and toast.

Roast chicken with bread and salad
Fajitas
'BBQ meats' as in, already prepared meats e.g. minted lamb steaks, premade kebabs, that can be cooked on a barbecue done under the grill with homemade tabbouleh, hummus, tomato salad and pitta

Following!! :D I CBA to cook when the weather's so nice and my kids are salad dodgers (luckily the small one will eat the raisins and grated carrot from the salad but the bigger one has had a sandwich for dinner twice this week now!)

I tend to serve a lot of things with salad but can get away with it if the salad is a side!
Falafel in pitas (we like baked butternut squash ones) served in pitas with a yoghurt sauce and salad.
Chicken and pineapple skewers, ciabatta and salad
Nacho chicken (chicken breast topped with salsa, cheese and crushed tortilla chips and baked)
Baked sweet potato with apple slaw and salad.
Cod wrapped in pancetta with broccoli and green beans stir fried with garlic.
Spanish chicken tray bake.
Salmon, pesto, new potato and green veg tray bake.
Linguine with crab, chilli and cherry toms
Tuna steaks with balsamic reduction, roasted peppers, red onions, courgettes

Some meals we're having this week:
Crispy tofu in a garlic chilli sauce, bok choy with garlic and ginger and rice
Grilled portabello mushroom burgers with salad
Roasted spicy chickpea wraps w. salad, cucumber, pepperoncini, yogurt dressing
Jacket potatoes (on the grill) with bean chilli
Huevos rancheros
