So I can straighten up, or replace, the spring in it?

I thought it'd either turn, or pull off, like the rest, but it doesn't Confused

It's like it's superglued to the bloody ceiling!

Any idea how to remove this from the bathroom ceiling?

Slide a sharp knife around the base if it's been stuck in with paint?

I've tried that, this morning, & wondered about just keeping scraping at it 🤷‍♀️

Remove the fuse from the consumer unit, so you have isolated the electricity to the fitment. If it’s broken you’ll probably need a new one, they’re quite cheap.
Once isolated you can use some force to remove it, pliers, hammer, whatever.

I thought the big white but unscrewed from a base normally but that does look old.

What are you trying to do? Replace the pull cord? Once it has been isolated you may have to smash it off. ( my electrician did this). It could have yrs of paint/and or plaster around it, keeping it stuck rigid. You will then need to make the exposed wires safe immediately after.

As a side note , the mould on the ceiling is shocking. I suspect no insulation behind the ceiling or a leaky roof or both. Room also needs ventilation. Wear a mask
when removing that light fitting as mould spores will be disrupted and airborne.

Is the ceiling artexed? I cannot see from photo. If so, you will need a professional due to possible asbestos in the artex. I personally would not use that light source until damp/ceiling issue resolved. I suspect ceiling may need to come down.
