Any suggestions for 3 pork chops, so they feed 4 people?

I'm not feeling inspired by them but am trying to use up the majority of the contents of my freezer, since some of it's not been touched since I last defrosted it just before Christmas.

Any ideas?

I have a well stocked pantry & could pick up a few bits if needed but don't want to spend loads to use them up :)

I would have something else I like and feed the 3 chops to the rest of them. I love poached eggs on toast for dinner (more than chops!) but rarely have it as no-one else in this house sees it as a dinner.

Or buy a 4th chop.

I'm having pork stir fry later, using chops. Add loads of veg, noodles and maybe some prawn crackers/other extras on the side. Sorted.

Chop up and have a curry, bulk up with potatos or butternut squash or something.

Roast and cut up for sandwiches for lunch if you have alternatives for dinner.

Can you cut the biggest in half and con 2 of the people into thinking they have a whole chop each? Bulk with extra veg, and complain that pack seemed to have been cut thinner than usual?

Pork satay with vegetables and noodles or slice up the chops into bitesize pieces and make a ragu with added fennel seeds to serve with pasta

Some kind of stir fry, sweet n sour etc, chopped up and with plenty of extra veg to bulk it out. If Chinese style, could serve some prawn crackers on the side.

Smothered pork - we cut the pork into strips so 3 would easily serve 4

Chop them up, marinate them in oil/lemon juice/herbs/salt/ pepper.
Make them into pork cutlet by coating with flour, dunk them into flour+egg mix then coating with bread crumbs. Fry in oil or air fry.
Bread crumbs will add some volume so you may not feel like there's not enough meat for 4 people.

Anything where you cut the meat up. They'd work well in a Spanish style stew with potatoes, tomatoes, onions, garlic, paprika, peppers and some chorizo if you have any.

Anything where you don’t serve the meat whole. So something like a curry or stir fry would be my immediate ideas.

Japanese Tonkotsu pork cutlets are really tasty - and they are served already sliced. That way it will be easier to serve up!
I serve on a bed of rice, with vegetables cooked in a fake curry sauce. after marinading I'll usually dry them off and beat them with a meat hammer (sorry don't know the word)! This makes them even more succulent

This recipe is a little weird though, we don't normally have mushrooms in there (but you definitely can if you like them) and we eat them with fried eggs and beetroot, no lingonberry jam. It's one of those use-up-leftovers recipes.

pork and black bean tacos - chop your pork and fury with onions, cherry tomatoes (halved), black beans, chipotle paste and and 100mlnof chicken stock.
Serve with flour tortillas, Ice burg lettuce, sour cream, lime wedges and grated cheddar
