Long braise. You can do beer braised like a stew or red wine braise. If you can manage, a long one of minimum 3 hours. BBC good food has some good recipes

I cover in seasoned flour then put in a pot (mine are usually cut into chunks so I can layer them in the pot), add a thinly sliced onion to the top, then cover with water, adding a bit more flour and mixing it in with my hand. Sometimes chuck in a bouquet garnis or a couple of bay leaves, sometimes don't bother.

Cover with foil tightly then put the lid on.

Oven at 120C fan for twenty minutes then down to 90-100c fan for 6 hours. It's very forgiving of too much time! It'll fall off the bones.

Boil the bones for stock the next day.

Put on oven then cover with BBQ sauce and loosely cover with foil. Remove foil after 25 mins for last 15 mins.

Brown & season the ribs well then braise them low & slow for hours in wine, beer or stock with onions, garlic, carrots, celery, herbs etc. When they are almost falling off the bone, remove them, strain the cooking liquid & reduce to a rich thick gravy then serve with mashed roots.

Delicious!
