Things to do in Edinburgh area (without kids)

We've got some childfree time coming up soon and we're going to be staying just outside Edinburgh.

Don't know the area well at all, so looking for suggestions of good things to do, places to go, food/drink, maybe a spa etc.

Want to make the most of our time and go places that we probably couldn't/wouldn't with the ankle biters!

The spa at the Shereton Hotel in the centre of Edinburgh is amazing! Not sure what they are doing covid times though and definitely not cheap!

Lunch at the balmoral (also pretty pricey though). There are quite a few really good restaurants on Rose Street which are more reasonable. The mussel Inn is fab if you like seafood so is fishers in the city.

Walk up Arthur's seat if feeling energetic!
Drink at the Grass Market the beehive I think has a really good beer garden out the back
