Accidentally put 25g less butter and sugar into my cake. It'll be alright, won't it?

The recipe called for 675g each of butter and caster sugar. I split it in half and somehow came up with 313g. So I've missed out 25g of each! It's my sons birthday cake, will it be ok or will it be a bit dry? Sad

Thank you, I really hope so. It's a madeira cake and I'm carving it up and building it into a dinosaur 😬 So the last thing I need is it crumbling to pieces when I'm trying to put it together!

If you freeze it before you carve it, it'll make your life much easier

I don’t have much of a sweet tooth so always put 1/3 to 1/2 the sugar started in the recipe ( and Mary Berry recipes tend to state 1/3 more than otherwise identical recipes) so it’s a movable feast. And I don’t think 25g less fat will show, it’s a small proportion of the total.

As everyone's said, it should be fine as that's only a small proportion of the prescribed total for each.

I always massively reduce the amount of sugar stated in cake recipes, anyway. They're unbearably sweet otherwise.

Totally fine. Don’t forget to freeze it before you chop it up, it’ll be less crumbly if you chop it frozen.

No, as long as you wrap it up well and don't store it beside crushed garlic. That last helpful tip is from experience Grin

Freezing before carving was a great tip, thank you! Nearly sliced the tip of my finger off Blush But it went SO much better than I though it would!

Do you freeze it with the buttercream and jam in the middle, or put that in when it's defrosted?

@hippidyhiphip if you're making a shaped cake like mine, it's easier to carve the shapes when the cake is frozen. I'm still surprised at how well it went! Buttercream and jam go in later when it's all shaped and defrosted.

Ah thank you OP. I will have a go at that one next month. I am not sure mine will be as good as yours though. I always have big intentions but am let down with the icing them every time. Any tips? Was that ready roll icing?
