It sounds okay.

To make it delicious swap the chopped ham for fresh tiger prawns and swap the pesto for half a chicken stock cube in 100ml water.

Swap the leeks for halved cherry tomatoes and you're onto a winner Grin

Sounds lovely OP, if you sauté it on low for a bit longer the leeks will reduce. Even better if they're baby leeks.

If you have it pour a big glug of vermouth in there too.

pesto or creme fraiche but not both, I'd probably use creme fraiche and add a bit of something to give it a kick e.g. mustard, strong cheese or horseradish.
Personally I don't like leeks but in the context of the dish it sounds ok.

I think the pesto and creme fraiche will be great ... sometimes unless it's a good quality one pesto can be a bit bitter so it'll mellow that slightly.

I disagree. Pesto on it's own is quite full on, so mixing it with something creamy and maybe a bit of stock or pasta water gives more sauce, if that's what you want.

I use red pesto and creme fraiche together in pasta, with onions, garlic, herbs, chicken, chorizo and a glug of white wine. It’s fab.

I’d do either leeks or onions, and trade the ham for something more flavourful like bacon or pancetta. Chuck some Parmesan in the creme fraiche :)

Leeks and mushrooms are lovely together. My favourite easy pasta dish is leek, mushroom, garlic, creme fraiche and smoky tofu as a veggie substitute for ham.

Agree with some of the OPs. Pesto or creme fraiche. If creme fraiche then I'd probably add some flavour like garlic, chilli, mustard powder. Pesto maybe leave the leaks and add some pine nuts.

It depends if you are buying ingredients or using stuff up. If that's what you have in your fridge then its absolutely fine. If you are shopping from scratch maybe some tweaks.

I think it sounds fine. I personally don’t like mushrooms but that’s my problem not yours! Agree with PPs though that you only need one of leeks or onions (I’d stick with leeks so long as you cook them long and slow) and pancetta would be bolder than ham but ham is hardly a bad choice! Love mixing pesto with cream or creme fraiche, it makes the dish more luxurious and that will work well with the veggies you are using.

Pesto and creme fraiche mix all the way - keep it light on the creme fraiche so as to not dilute the pesto too much. Just adds a nice creamy touch

Sounds perfectly fine. I use pesto and creme fraiche together all the time, and then just whack in whatever veg I have in the fridge! That’s pretty much every Monday night dinner in this house!

With your ingredients I would slowly sauté the leeks or onions in some butter with a load of garlic until soft, and then add the mushrooms, and then the creme fraiche with some grated cheese.

Not totally sure about the mushrooms, but the rest of it sounds fine as a combination.
