What's on your vegetarian/vegan meal plan next week?

I'm not vegetarian or vegan but I'm trying to go eat more plant based foods and possibly go vegetarian/vegan in time.

I find it a little more difficult to plan vegetarian meals. It seems ro be more difficult for me for some reason. Does anyone have any tips?

So far for next I have the following planned(not for any particular day)

Pumpkin and mushroom pasta
Shakshuka with black eyed beans
Leon recipe book Superfood salad
Mezze platter
Baked peanut crispy tofu, probably with jasmine rice and some green veg.

After that I'm stuck.

Cauliflower walnut burritos, I’m currently obsessed with them. Try the Tasty.co app/website.

I’m usually plant based but I’m doing vegetarian keto at the moment so have incorporated cheese and eggs back in for ease, so I made zuchinni tortilla wraps to go with them.

Other meals on the list are mushroom walnut lasagne (sub pasta with eggplant), stuffed mushrooms and a lot of salads because I love them.

Katsu sauce with quorn crispy chicken breast fillet and rice
Dhal with roasted spiced cauliflower and cashews
Vegan curries - I did a chickpea and spinach one and a cauliflower one this morning
Shepherds pie - mushrooms instead of mine
Vegetarian sausages, mashed potatoes and gravy
Vegetarian fajitas
Tortellini and sauce
Vegetarian chilli
Pizzas

I think it probably can be more difficult if you’re used to eating meat as it tends to be the ‘centre’ of the dish for a lot of meat eaters. The food/recipe section here can be good for inspiration- lots of veggies ideas.

This evening we’re having a smokey butter bean & veg stew with meat[free] balls and crusty bread. Other meat free dishes on this weeks meal plan are:

Aubergine parmigiana
Spicy bean burgers with various sides
Veg pasta bake

Some quick and easy veggie meals we do regularly are:

Halloumi and veg burritos
Various pasta dishes
Stir fry with tofu/cashew nuts
Frittata/Omelette

A bit more effort but things like veggie curries, bean chilli, veg & lentil stews, lentil, mushroom and walnut ragu can be made in batches and frozen.

Risotto primavera - a big favourite in my house but not vegan. I really love asparagus.
Mushroom bourguignon - just for me as no one else likes mushrooms
Veggie burgers

That's all I've got so far but I tend to cook too much so most meals have left overs.

This week a couple more interesting meals we are having are pea,mozzarella and lemon tart. Spicy Dan Dan noodles (use either mushrooms or veggie mince) red pepper cous cous.

Tonight I'm having sweet potato fajitas. Basically substitute the chicken with oven baked sweet potato with the fajita seasoning.

Tomorrow, I will have cauliflower pizzaiola with pasta (from BBC Goodfood).

Monday, I will have polenta with oven rosted veg and feta cheese sprinkled on top (one of my favourites).

That's all I have got planned so far.

I'm not a veggie/vegan but we try and eat less meat based meals.
Tadka dhal, halloumi fajitas, mushroom stroganoff with wild rice, and toad in the hole (made with the veggie Richmond sausages) are all a family favourite

Sat - pesto, mozzarella and cherry tomato pasta salad for picnic lunch
Chilli bean cornbread cobbler for dinner
Sun - veggie sausages, cheesy mash and caramelised onion gravy
Mon - waffles for breakfast
Mini quiches and slices of pizza for picnic lunch
Spicy lentil and carrot stew for dinner
Tue - vegetable and butter bean crumble
Wed - vegeree
Thur - cauliflower, sweet potato and chickpea traybake
Fri - bbq pulled jackfruit sliders

So far we've got:
Falafel, Greek salad, tsatziki and pitta bread

Tortellini with mushrooms and some sort of creamy white wine sauce/spinach

Veggie shepherds pie

baked camembert with bread, celery, radishes etc

Not sure what else yet. I need to finish my order.

I’m sick at the mo so the shop is full of convenience food for next week but typically:
Bean chilli (Bosh recipe available on line as ultimate chilli)
Huavos Rancheros
All sorts of dhals

BBC’s sag aloo recipe
Various quorn breaded products if family is having burgers or Kiev’s
Nigella’s golden egg curry (love!)

If you like Indian food Zaika is an awesome book, cook from it all the time!

The green roasting tin is a good book for easy midweek meals.

We tend to have a loose weekly rotation of:
Indian (dal, veg curry and naan)
Chinese (basically stir fry, might do Peking jackfruit or bao buns for a weekend meal)
Pizza
Burgers chips + plenty of veg sides
An all in one dish

I find it really helps to cook seasonally too, we have a big veg garden now but before that trying to stick to seasonal veg made it harder to fall into a rut.

A lot of the time we just roast various veggies (carrots, onions, parsnip, peppers, courgette, broccoli, whatever we have in), then stir through a tin of lentils or cooked chickpeas, make a lemony dressing. Add rocket and sometimes halloumi.

Kitchen Warrior - what sides do you have with burger and chips? Other than corn on the cob, I never really know what to do.

A few more things we have regularly -
veggie chilli
black bean soup with nachos
dhal
lentil spag bol
cheese and shallot tart with a rocket salad
Richmond sausages, mash and vege
quiche with new potatoes and salad or garlic roasties and salad
risotto
roasted halloumi and vege in wraps with salad and chilli sauce or peri peri sauce

I'm not veggie either but my husband is so we eat quite a lot of veggie meals.

Quorn pepper steaks with yorkshire puddings, gravy, roast potatoes and veg.
Wholewheat penne arriabatia with walnuts and rocket
Quorn cajun casserole with rice and peas
Sweet potato and spinach stew with ciabatta bread
Veggie meatballs with IKEA sauce, green beans and chips

This week
Tonight: gnocci with home made red pepper and olive pesto with roasted tenderstem
Tomorrow: veggie sausage stew with roasted tenderstem and fresh ciabatta
Monday: Penang tofu
Tuesday: fajita veggies and wedges with guac and salsa
Wednesday: Cajun red beans and rice
Thursday: my DP sorts and never plans ahead ever so that’s always a surprise...

Onion rings. Ooh, yes - good call!

The other things sound lovely, but not sure I'd want them with a burger, personally.

Maybe a homemade coleslaw of some sort?
