Edinburgh Birthday Lunch recommendation

DD is celebrating her 21st with a day out to Edinburgh in June with her boyfriend .

I thought about booking The Kitchin as a birthday lunch treat, but it's already booked.

She's a foodie and it's a special treat. Could you give me any suggestions for a set midweek lunch restaurant that you'd book for a special occasion

There’s are a couple of other Tom Kitchin restaurants called 21212 and The Scran and Scallie.
The Witchery by the Castle is very atmospheric, Fhior has a great reputation.

Def The Witchery (or its sister restaurant The Secret Garden) or the restaurant at The Balmoral hotel

The Lookout on top of Calton Hill (sister restaurant to the Gardener's Cottage) would be my choice - the views across the city really add to the experience. They do a chef's table tasting menu, which would be fantastic for a foodie, but not sure if that's available at lunchtime or just in the evening.
